Sweet Potato and Spring Onion Fritters

The thing I love about sweet potatoes is that they are so versatile. From baking them as chips to using them in brownies, they make an excellent ingredient in many dishes. Here I have grated them to make these fabulous fritters, which I tend to enjoy for lunch. My mum is a huge fan of this dish and i'm sure many of you will agree once you try them yourself.

Ingredients:

(Makes 4 large fritters)

- 200g grated sweet potato (1 large sweet potato grated)

- 60g grated cheddar cheese

- 1 large egg

- 1 tbsp flour

- 3 spring onions

- Salt and Pepper

- Rapeseed oil

Optional toppings:

- sour cream & chive

- 2 slices of parma ham

Method:

1. Chop your spring onions and set aside a few for garnishing.

2. Add your grated sweet potato, spring onions, grated cheese, flour, egg and salt and pepper to a bowl and mix until well combined.

3. Divide your mixture into 6 flattened balls (see image)

4. Heat up a pan on a medium heat with about 1-2 tbsp of oil (I like to use rapeseed oil).

5. Place the balls on the pan and flatten them slightly with a spatula.

6. Fry them on each side for about 4 minutes so they have a nice crispy coating.

7. Meanwhile, place the strips of parma ham under the grill on a medium heat for approximately 4 minutes, making sure to keep an eye on it, until its crisps up.

7. To plate up, lay down a bed of rocket and lie your fritters on top. Then dollop some sour cream & chive, scatter over the remaining spring onions and tear up the crispy parma ham to finish off the garnish.
