Mixed Seed & Nut Granola

I used to be lazy and always buy granola from the shop. Since discovering just how easy it is to make homemade granola, there's no going back!

The great thing about homemade granola is that you can personalise it with your favourite seeds and nuts. It is also a lot healthier because most shop bought granolas are packed with sugar, but this tasty stuff is sweetened by a controlled amount of delicious honey.

Alter the recipe to your taste - add a variety of nuts, seeds and sultanas!

Ingredients:

(Makes a 400g batch)

- 125g oats

- 200g mixed seeds and nuts*

- handful of sultanas

- 4 tbsp honey

- 3 tbsp coconut oil

- 2-3 tsp cinnamon

*I used pumpkin seeds, sunflower seeds, chia seeds, sesame seeds, walnuts, hazelnuts, cashews, almonds and pine nut kernels

Method:

1. Preheat oven to 170 degrees.

2. Put all your ingredients in a bowl and stir until it is all combined - so easy!

3. Line your baking tray with baking parchment or foil and spread your granola mixture evenly over it.

4. Pop the tray in the oven for 5 minutes.

5. Remove the tray from the oven and toss the granola

around. Place back in the oven for 5 minutes.

6. Once done, put the granola in a container without the lid on to allow it to cool.

As the granola cools, clumps should form due to the stickiness provided by the honey and coconut oil.
