Building a Beautiful Brunch

Here I take you through step-by-step how to put together this gorgeous breakfast/brunch. The dish consists of humous on toast, smoked salmon, asparagus, avocado, poached egg and a final drizzle of sweet chilli. Sweet chilli sauce may sound like a bizarre choice for breakfast but the flavour complements the other ingredients nicely and also give it an artistic touch.

Overall, this is a quick and easy throw it all together kind of breakfast but it certainly won't fail to impress any guests you might have over for brunch!

Ingredients:

(For an individual serving)

- Slice of wholegrain seeded bread

- Humous

- 1 large egg

- 4 mini asparagus

- half an avocado

- slice of smoked salmon

- sweet chilli sauce

Method:

1. Begin by boiling water in the kettle and then pouring into 2 saucepans over a medium heat. Add your asparagus to one pan and your egg to the other.

Decide how you like to poach your eggs - I made these by just plopping them in the water but sometimes I use my trusty plastic egg poachers. The eggs and asparagus should take about 4 minutes to cook.

2. In the meantime, toast your bread.

3. Now it's time to start building the brunch! Spread a nice layer of humous on your toast.

4. Layer your asparagus on top.

5. Put a slice of smoked salmon over the asparagus, then your avocado and finally the poached egg.

6. Crack some pepper over your egg and drizzle some sweet chilli sauce to complete the dish.
