Sesame and Soy Glazed Salmon

A variety of colourful vegetables make up the base of this dish and complement the gorgeously glazed salmon. Mix and match whatever vegetables you like!

To marinate the salmon I have used a combination of oriental flavours including soy sauce, sesame oil and ginger. I absolutely love the taste of the salmon cooked in this marinade and adding the black sesame seeds make it look impressive too.

The dish is completed by the scattering of crispy kale, adding another level of texture to the dish.

Ingredients:

(Serves 3)

- 3 fillets of salmon

- thumb sized piece of ginger (grated)

- 3 tbsp sesame oil plus extra for frying

- 1½ tbsp soy sauce

- sesame seeds to sprinkle over salmon

- stir fry vegetables (I used red pepper, spring onions, tender stem broccoli, mushrooms and carrots, courgettes)

- 3 handfuls of kale

- teriyaki sauce

Method:

1. Preheat the oven to 180 degrees.

2. Place the salmon fillets in an oven proof dish and marinate them with the sesame oil, soy sauce, grated ginger and sprinkle some sesame seed on top. Place them in the oven for 18-20 minutes until they are cooked through.

3. In the meantime, prep your vegetables by thinly slicing them. I used a spiralizer for the courgettes and carrots.

4. Place the kale on a baking tray and drizzle some sesame oil over, then place it in the oven for 10 mins.

5. When your salmon is 5 minutes towards finishing, fry your vegetables on a high heat in some sesame oil.

6. Remove the salmon and kale from the oven.

7. Lay a bed of vegetables in the serving bowl, top with the salmon fillet and the crispy kale. Drizzle some teriyaki sauce over the top.
