Cappuccino Crème Brûlée

For any coffee lovers out there, this is your ultimate dessert!
The custard is infused with delicious coffee flavours and topped with a crunchy layer of sweetness. These lovely individual desserts can be made 2-3 days in advance. Before serving, place them under the grill for 5 minutes until you see a golden brown crispy caramel topping - yum!


Ingredients:
(Serves 7)
- 3 eggs
- 300ml single cream
- 300ml double cream
- ½ tsp of vanilla extract
- 55g caster sugar
- 100g caster sugar for the topping
- 2½ tsp of instant coffee granules
Method:
1.Preheat the oven to 170 degrees.
2. Whisk the eggs, sugar and vanilla extract until they're combined.
3. Pour all of the cream into a pan and heat it on the hob to boiling point. Then stir in the coffee and allow it to cool for a few minutes.
4. Pour the cream and coffee mixture into the egg mixture whilst whisking at the same time. It will be a little foamy at this point.
5. Strain the mixture into jug, aiming to remove the bubbles. There might still be some bubbles still but that's not an issue. Then pour the mixture in the jug evenly into each of the 7 ramekins.
6. Pour hot water into an oven proof dish so that it is half full and place the ramekins in the dish. This can now be placed in the oven for 20-25 mins, until the custard has just set.
7. To make the caramel topping, add the sugar to a pan and add a splash of water to dampen the sugar. Allow the sugar to melt on a medium heat, ensuring to stir constantly.
8. Increase the heat and stop stirring, allowing the sugar to caramelise. Instantly remove the pan from the hob once it turns a pale yellow colour and pour onto a baking sheet.
9. Allow the sugar to cool so it becomes hard. Break it into chunks and using a blender, blitz it to a fine sandy consistency.
10. Once you remove the ramekins from the oven, allow them to cool and they can be put in the fridge for up to 3 days. Before serving, sprinkle the sandy sugar generously on the top and place under the grill for 4-5 minutes.
