Jackfruit Pulled 'Pork' Burgers

Who’s seen a jackfruit before? Go and google it if you haven't...

Strange looking thing right? This was my first attempt at cooking with jackfruit and it was a HIT! The only approval I need is from my meat-loving brother and it ticked all of his boxes, so I’d say it’s a winner. The texture totally resembles pulled pork. You can add various seasonings and sauces to please anyones tastebuds.

Try this one out as one of your weekday plant-based meals and I'm sure it will not disappoint.

Ingredients: (makes 3-4 burgers)

- 1 tin (400g) jackfruit

- 1 large red onion (or two small) sliced - 2 garlic cloves (crushed)

- Olive oil for frying

- 1/2 tsp cayenne pepper

- 1 tsp ground paprika

- 1 vegetable stock cube

- 1 mug boiling water

- 3 tbsp BBQ sauce

- 3-4 burger buns

Optional fillings:

- Radish

- Tomato

- Lettuce

- Vegan Mayonnaise (or normal if making vegetarian version)

Method: 1. Preheat oven to 180degrees 2. Fry the onion, garlic and spices in some olive oil for 5mins until the onion is softened. 3. Add the jackfruit and sauté for another couple of mins. 4. Pour in the water and crumble in the vegetable stock cube. Now leave this to simmer for 10mins. Whilst it’s simmering, mash the jackfruit with a spatula so it creates the ‘pulled pork’ texture. 5. The water should have mostly soaked up by now but if not, just spoon out the jackfruit mixture onto a baking tray lined with foil and stir in the BBQ sauce. Spread the mixture out across the tray. 6. Pop the tray in the oven for 30mins and stir half way through. 7. Fill up your burger buns and EAT
