Coconut Snowballs

Don't worry, I'm not teaching you how to create and eat snowballs in this recipe. I just thought these little desiccated coconut balls resembled cute snowballs, so why not give it a fun name?!
Lately I have been super lazy with treats and just been grabbing a tub of Häagen-Dazs ice-cream or a bar of chocolate to satisfy the sweet tooth. I thought enough is enough and it is about time I create some healthy treats to beat those cravings. This recipe only calls for 3 (or 4 if you want) ingredients, making it super simple, cheap and quick to make! What makes these balls even better is that they are stored in the freezer so will last you absolutely ages...if you can keep them for that long.
I have chosen to use dark chocolate to coat my balls but I can imagine white or milk chocolate will be even more tasty (just less healthy - oops). An optional addition is maple syrup or honey if you need a sweeter taste but still avoiding those nasty refined sugars. Another ingredient which can be experimented with is the yoghurt. I have gone for coconut flavoured soya yoghurt, however any yoghurt should work as this is just to bind the desiccated coconut together. Perhaps experimenting with flavoured yoghurts could add a cheeky twist - let me know in the comments if any of you try this out!
CAUTION: this recipe requires you getting messy...

Ingredients
(Makes 7 balls)
- 50g desiccated coconut
- 1 ½ coconut flavoured soya yoghurt
- 70g dark chocolate
- 2 tsp honey or maple syrup (optional)
Method
1. Mix the yoghurt and desiccated coconut (and honey/maple syrup if using) to form a sticky mixture that will allow you to then create several small balls. Pop these in the freezer for half an hour to set.
2. After they have set, remove them from the freezer. Melt the chocolate in the microwave for 30 seconds then drop your balls into the melted chocolate to coat them (the messy bit!).
3. Put them back in the freezer to set where they can be eaten once the chocolate is hardened or store them there for future sweet cravings!
