Healthy Banana Pancakes

Pancake day is coming so it's only fair that I share a pancake recipe with you guys!

Oh yes guys, these pancakes are healthy so you can have them everyday of the week if you really want to!

What is great about them is that the batter only requires 4 ingredients so they're super simple to make. You know those poor brown bananas in your fruit bowl, well these are perfect for this recipe so don't throw them away!

Choose any toppings you want. Here I have gone for frozen berries, granola, greek yoghurt and honey.

Ingredients:

(Makes 5 small pancakes)

For the batter:

- 1 mashed banana

- 45g oats

- 1 medium egg

- 1/2 tsp baking powder

- oil for frying (I used coconut oil)

Method:

1. Put all the ingredients into a food processor and blitz until you have a smooth batter. It will be thick but this is good.

2. Heat some oil in a frying pan over a medium heat.

3. Using a spoon, dollop some batter onto the pan. Flatten it slightly but you want the pancakes to be thick and fluffy - do not fear, they will cook through

4. Add all your 'dollops' to the pan, leaving them for 2-3 minutes before flipping and frying the other side for another 2-3 minutes.

Depending on how thick your pancakes are, they may need more time to cook through so just leave them on a low heat.

5. Pile your fluffy pancakes onto a plate, top with your favourite toppings and ENJOY!
