Festive Florentines

That first bite into the chewy cranberries and crunchy flaked almonds and there is no going back. I can assure you, you will want more that one of these little beauties!

They are super simple to create and make a gorgeous Christmas gift for someone special. Milk? Dark? White? Being a chocaholic, I personally cannot choose my favourite chocolate so I have used all three. That final drizzle of chocolate on top makes all the difference and nobody will ever know just how easy they are to make!

Ingredients:

(makes ~ 12)

70g demerara sugar

20g butter

10g plain flour

60ml double cream

200g chocolate (white/milk/dark)

50g flaked almonds

30g pistachios chopped

35g dried cranberries

pinch of sea salt

Method:

1. Preheat the oven to 180 ºC

2. Melt the butter and sugar in a saucepan over a low heat.

3. Sift in the flour and mix to combine into the melted mixture.

4. Gradually pour in the cream ensuring to stir as you pour.

5. Add the almonds, pistachios, cranberries and a pinch of salt and mix this all to make sure everything is coated in the delicious sweet sauce.

6. Line a baking tray with baking parchment and using a teaspoon, dollop the mixture into individual flatten balls on the tray. Make sure the leave a space between each dollop and they do spread whilst cooking!

7.Place the tray in the oven for 10 minutes until they are golden brown.

8. Once the disks are removed from the oven, allow them to cool and harden before attempting to remove them from the tray.

9. Whilst they cool you can begin melting the chocolate by breaking into small chunks and placing in the microwave for approximately 20 seconds. Stir the chocolate and see if it needs more microwaving – but don’t burn it! Alternatively, you can melt the chocolate in a bowl over a saucepan of hot water.

10. Take your cooled Florentine disks and cover the bases with the melted chocolate. Do this for all the disks then place them in the fridge or freezer for the chocolate to solidify.

11. Once the chocolate bases have solidified, drizzle over the remaining melted chocolate over the surface to make them look pretty!
