Chickpea Blondies

Bizarre you may think, but these sweet healthy treats are made from chickpeas!
It is so great knowing that I can indulge in these blondies knowing that all the ingredients are totally natural. Obviously these don't contain refined sugars and flour so don't expect an ooey-gooey Betty Crocker brownie but for a little guilt-free treat, they are so perfect!
Try adding chocolate chips or pecans to the batter to give the blondies an added texture when you bite through them.

Ingredients:

(Makes 8 squares)
- 1 can chickpeas
- ¾ cup dates (soaked for 10 minutes)
- ¼ cup peanut butter
- 1 egg
- ½ tsp baking powder
- 1 tbsp honey
- dark chocolate (optional)
Method:
1. Preheat the oven to 180 degrees.
2. Add the chickpeas to the food processor and blitz until smooth.
3. Add the remaining ingredients and blitz until everything combined, so you have a smooth batter.
4. Pour the mixture into a small baking tray and place in the oven for 20-25 minutes.
5. Remove the tray from the oven and allow it to cool. This can take up to an hour but be patient!
6. Using a sharp knife, slice the blondies into squares and carefully remove them from the tray.
7. Melt the chocolate in the microwave for about 30 seconds then drizzle over the blondies.
