Honey, Oat & Banana Cookies

Just another use for those brown bananas in your fruit bowl. These cookies are soft, sweet and super simple to make.

I came home for the weekend and spotted some sad bananas so I had to put them to good use. The rest of the ingredients are usually found in my fridge or cupboard, which means a shopping trip wasn't needed either! Also, these cookies are free from naughty stuff but go ahead and add some chocolate chips if you really want.

Ingredients:

(Makes 6 cookies)

- 2 small bananas (or 1 large banana)

- 100g oats

- 2-3 tbsp honey (depends how sweet you like it)

- handful of raisins or chocolate chips (optional)

- 1 egg

- sprinkle of icing sugar for decoration (optional)

Method:

1. Preheat your oven to 180°C

2. Mash your bananas with a fork

3. Put all of your ingredients into a bowl and mix until well combined.

4. Dollop your mixture onto your baking tray in circular shapes and place in the oven for 15 minutes or until golden brown.

5. Remove from the oven and allow the cookies to cool (but if you like soft, warm cookies like me then dive in!). Sprinkle some icing sugar over them to make them look pretty.
