Carrot Cake Overnight Oats

I didn't think I'd ever see the day of having carrots for breakfast but if it involves carrot cake then I'm in!

Ok so this isn't quite carrot cake but it's more exciting than your average bowl of porridge. It is a super filling breakfast so it will definitely get you through to lunch.

When you know you're in for a rushed morning the following day, prepare yourself this delicious breakfast the night before so you can simply grab your spoon and enjoy. You could even pack it in a Tupperware and have it on the go!

Ingredients:

(Makes one portion)

- ½ cup oats

- ½ cup milk

- ¼ cup yoghurt

- ½ tsp cinnamon

- 1 tbsp raisins

- 2 tbsp chopped walnuts

- ½ tbsp maple syrup

- ¼ cup grated carrot

Method:

1. Add all of your ingredients to a bowl and mix until well combined.

2. Place your mixture in the fridge overnight.

3. In the morning, top with a bit more maple syrup (and other toppings if you like) and you can add some more milk to achieve your desired consistency.
