Coffee & Walnut Protein Balls

I cannot describe to you how great these taste. They taste just like cake but they're healthy?! The ingredients are all organic, vegan and there are no refined sugars. Obviously everything in moderation but for a little snack these are perfect as they are guilt free and also packed with protein.

'That Protein' kindly let me sample some of their 'Chirpy Chirpy Choca Mocha Super Protein' so I got straight on the case and started thinking of some recipes. Instantly I thought of my favourite cake, which is of course...coffee and walnut. If you prefer to not use protein powder then just substitute it for a few more walnuts and the balls will still be just as yummy!

These are super simple to make and there are very few ingredients required. I hope you like them as much as I did.

Ingredients:

Makes 6 balls

- ½ cup walnuts (plus extra for decoration)

- ¾ cup pitted dates

- 4 tsp protein powder

- 1 tsp instant coffee granules.

- desiccated coconut for decoration (optional)

Method:

1. Make a concentrated solution of instant coffee by adding a small amount of boiling water to the coffee granules.

2. Add the walnuts, dates, protein powder and 1 tsp of the instant coffee solution to a food processor and blend until you form a gooey mixture. The walnuts should be chopped and the dates should form a sort of paste.

3. Pick up a small piece of the mixture and roll it into a small ball (you can choose what size you want them). Repeat this until all of the mixture has been used up. Roll the balls in desiccated coconut and stick a walnut on top to make it look pretty!

Store these in an air tight container in the fridge...or eat them all at once like my flatmates and I did!
