Baked Sweet Potato with Crispy Kale & Smoked Salmon

No more boring jacket potatoes please!

I introduce to you this gorgeous smokey paprika baked sweet potato accompanied with some gorgeous flavours including salty sundried tomatoes, smoked salmon and the crunchiness of the crispy kale.

No more time wasting as this baked sweet potato can be cooked with speed in the magical microwave. However we cannot sacrifice that crispy skin, so a brief 8 minutes in the oven will ensure you can achieve a soft centre with a crispy, salty skin in no time!

This is dish is a lunch dish I'll find myself going to when I want something quick but still filling and nutritious. I like to scoop up every component with my fork so I can experience all the flavours in one and ohhhhhh my it is delicious!

Ingredients:

(Serves 1)

- 1 sweet potato

- 40g kale

- 30g sundried tomatoes

- 30g smoked salmon

- 1 spring onion

- olive oil

- paprika

- black pepper

Method:

1. Preheat your oven to 180C.

2. Wash your sweet potato and then prick it many times with a fork. Rub some oil and paprika over the skin. Put the sweet potato in the microwave for about 8 minutes.

3. Scatter your kale onto a baking tray and drizzle some oil and black pepper over it. You can place the sweet potato on the same tray (shown in picture) and pop this in the oven for 8 minutes. Keep an eye on your kale ensuring it doesn't burn.

4. Meanwhile, chop your spring onion and sundried tomatoes.

5. Remove the tray from the oven. Place the baked potato on your plate, slice it open and place your spring onion inside it. Scatter the crispy kale all over over the plate, place your sundried tomatoes and slithers of salmon around the potato and finish of with a nice drizzling of mayonnaise!
