Frozen Yoghurt Plaque - with Pistachio, Pomegranate & Cacao Drizzle

Don't these chunks look so gorgeous?! You won't believe how easy they are to make.

However, don't be fooled by the picture...these are the few chunks I managed to salvage when making this plaque for the first time. ALWAYS remember to check your tray fits in your freezer before creating this dish. Despite this, these few chunks were so yummy and are a great clean treat when you're trying to be a little bit healthier.

You can use honey instead of maple syrup if you prefer. I just find the natural yoghurt tastes more like a treat when there is a little extra sweetness added. The lemon juice also acts as a natural sweetener, so all in all this is a great guilt free snack!

I love the colours that the pistachio and pomegranate bring to the plaque but you can always switch this up by substituting in raspberries, hazelnuts, blueberries or seeds...have a little experiment! That's what I love about this treat - you can't really go wrong (unless you don't check the dimensions of your freezer - oops).

Ingredients:

(Makes a large plaque)

- 500g natural yoghurt

- 2 tbsp maple syrup

- juice of half a lemon

- handful of chopped pistachios

- handful of pomegranate

- 20g 85% cacao chocolate solids

Method:

1. Combine the yoghurt with the maple syrup and lemon juice in a bowl and then pour it into a baking tray or any suitable container. You may find you might have to use a couple of smaller trays/containers. Taste it and add more maple syrup if you prefer it sweeter.

2. Scatter over the pomegranate and chopped pistachios so they are randomly distributed over the yoghurt. Now place the tray in freezer for about 15 minutes to allow the yoghurt to cool down so the melted chocolate will drizzle nicely on top in the following steps..

3. Meanwhile, melt your dark chocolate - I melted my cacao buttons in the microwave for 1 minute.

4. Remove the tray from the freezer and drizzle over the melted chocolate. Don't be afraid to be messy! I think it looks prettier when it's randomly drizzled everywhere.

5. Place the tray back in the freezer until it's frozen. You can break it up into chunks once it has frozen and store it in the freezer as an easy go to treat when you fancy a something sweet.
